Holiday Hours

Quills hours will be shortened a bit over the holiday season so that our staff can spend time with their families.  However we hope we'll still have a chance to properly send you on your way over the river and through the woods.  Stop on in during the times below...

(These apply to both Baxter and New Albany locations)

Christmas Eve - 9am 'til 2pm

New Years Eve - 8am 'til 5pm

Quills New Albany 

By now- rousing word of the new Quills in downtown New Albany has been carried to distant lands. But for those unfortunate faraway souls -and for you who need a little more enticement to come the heck on over - we are a sharing a few instagrammed photos of the new space.

Quills Coffee had an exciting opening day yesterday (December 7th).  We can't wait to continue getting to know you New Albanians.  Please bear with us as we continue to add merchandise, chocolates, etc.

Knit Night This Thursday!

If you know what these things mean: k2tog, p2tog, ssk, yo, k1f&b, m1....

...you are either a spy or a person who needs to be at Quills this Thursday (12/8) at 7pm for Knit Night!

Our very own Bob Major (whose name works well with the spy deal too) will be hosting and teaching us in an intro to knitting.  Now's your time to stop saying "i wish i could..." and get started on some Christmas gifts.

Crochet-ers and Embroider-ers are more than welcome as well!  If you have any questions at all contact Bob through Facebook or his email (bob.major@gmail.com)

If you are knitting, bring size 13 - 9mm knitting needles and a ball of yarn of the same gauge.

Quills Multiplied

Well hello there Ladies and Gents,

Let us tell you- first of all- that your oft-expressed enthusiasm towards our two new Quills locations paste such huge smiles on our faces, they're in danger of becoming stuck there.  Sure it's a little awkward but at least we look pleasant...and maybe a little creepy.

Anyways - we so appreciate your patience as we deal with  the red tape and other colors of tape and unexpected delays and all sorts of irritating hurdles we are glad to jump over for the sake of coming closer to you.

And the finish line is well in sight! New Albany will be opening in a matter of days and U of L's Cardinal Towne will not be too far behind.

Both new locations will feature the quality service, atmosphere and coffee you've found at our Baxter location including more fantastic local art and the addition of a slow bar where we'll focus exclusively on pour-overs (chemex and v60).

AND...New Albany will house our very own Quills roastery (woot!woot!) where Philip and John will don their capes researching, developing and experimenting with new coffees, methods, ideas and all those other things magicians do.  And of course we'll continue to produce, test and improve upon our tasty Blacksmith Espresso.

We'll see you in New Albany and Cardinal Towne very soon!

Quills Roasts: Blacksmith Espresso

(EDIT: To clarify- Quills has been roasting and sipping for quite a while now.  The "what's new" of that business is our new space and capacity for a more focused effort in the New Albany store and the introduction of our first blend personally labored over, born, named and available for purchase: Blacksmith Espresso.  And please read on to find out more about that.)

Big News! If you haven't heard yet, Quills Coffee is now in the business of roasting! We put so much of our time, effort and passion into serving you the absolute finest of coffee, it only makes sense to put our hands where our heart is and more personally craft the exceptional quality you trust us to give you.

And so after approximately a googol amount of thought, testing, re-testing, blood, sweat, and tears (ok not sure if there was actually blood but surely some tears), we now proudly offer you our very own Blacksmith Espresso.

Crafted from the fruits of Guatemala, Tanzania, and Burundi, Blacksmith is a blend that boasts a flavor profile ranging from a deep molasses sweetness to the higher notes of tangerine and citrus. 

Roaster John Letoto eloquently sums it up at its best: "At the very bottom, everything comes together like a candy bar- super complex and intense- sticking on the tongue in a really nice way." So there you have it folks.  If that doesn't tempt you, I'm really at a loss as to what will. 

But although Blacksmith Espresso is now available for purchase and consumption, it won't find its finish here.  As its name implies, this blend will continue to be further forged, molded and refined by our own  industrious "smiths". Stick around for the evolution, as well as many more Quills-crafted roasts.

Quills Brews Smart with Chemex

Chemex is a much-appreciated pour-over method among coffee connosieurs. Quills likes it because it reminds us of our own coffee crowd: simple, smart, communal...and dashingly handsome

Invented in 1941, Chemist Peter J. Schlumbomb used his knowledge of laboratory apparatus and methods of filtration and extraction to design this elegant coffeemaker.

The chemex is the centerfold of coffee brewers. Its enviable hourglass figure is gripped by a bentwood collar, tied with a rawhide strap. In fact, you’ll find it on display in New York’s Museum of Modern Art and the Smithsonian in addition to other art and design museums.

In addition to being so chic and debonair, this practical brewing method also boasts its smart and economic utility as both a dripper and decanter. Therefore one may both brew in and serve out of the same device. Plus, it easily serves 2-4 people.

The Chemex requires an exceptionally thick filter and a slower pour-over process producing a drink that’s clean and pure while retaining a rich depth and body.

At Quills, we think the only thing better than coffee is sharing and talking about coffee. We assume the MOMA has some rules about taking things off their shelves, so we invite you (and a friend or two) to have your first taste of Chemex brew right here at Quills.
