Quills Coffee: The Story
Quills was born, and continues to grow, out of the passion of a small but ever-growing number of people thirsty to see the perfect blend of fine coffee and southern hospitality in creative community spaces. It all began when Nathan and Amy Quillo’s own draw toward the meeting place of culture—art galleries, bookshops and pubs—met with a love of coffee kindled during their time working as part-time baristas. During his time in social work, Nathan began regularly meeting with students in local coffee houses, and soon found himself explaining the finer points of premium coffee roasting and brewing. With this blooming passion, a vision for Quills was born, and Nathan’s brother Gabe joined in with hammer in hand. After doing the bulk of their own remodeling, the two brothers opened up the original Quills in 2007.
Their enthusiasm proved infectious to both customers and their growing staff alike. This multiplying energy for all things coffee and creative has led Quills naturally down the path toward hand-crafted coffee, new creative spaces in Louisville and New Albany, and even into their own roasting. Now the thirst for great coffee rooted in good community extends to a roasting staff, three stores, many customers and even across the globe to relationships with brokers and farmers committed to healthy farming and direct trade at above-market pricing. Yet, through all the growth, the original vision for great coffee made by people who care and serve as friends in neighborhoods and communities around Louisville, has stayed the same.
